INGREDIENTS

  • For Paan Petha

    • ½ ash gourd

    • water as required

    • 1 tbsp alum

    • 1 cup water

    • 2 cups sugar

    • water as required

    • 1 tbsp alum

    • 1 tbsp green food colour

    • 1 tbsp green food colour

    • ¼ cup rose petal jam

    • ¼ cup candied fennel seeds

    • ¼ cup candied fruits

    • ¼ cup desiccated coconut powder

    • ¼ cup chopped pistachios

    • ½ tsp cardamom powder

    • ½ tsp saffron

    • 6-7 cloves

    • rose petals for garnish

    • edible silver leaf for garnish

PREPARATION

    Peel and deseed ½ ash gourd. Cut it into ½ cm thick slices.

    In a bowl, mix water and alum. Soak the sliced gourd pieces in alum water.
  3. 3

    In a pot, heat water and sugar for the sugar syrup (1:2 ratio). Add green food colour.
  4. 4

    In another pan boil two cups of water, alum and green food colour. Add soaked gourd slices and boil it for 4 – 5 minutes.

    Transfer the boiled slices to the sugar syrup and cook for 12-15 minutes. Remove the slices and set them aside to cool.

    In a bowl mix rose petal jam, candied fennel seeds, candied fruits, desiccated coconut powder, chopped pistachios, cardamom powder, saffron strands and mix well.

    Place the stuffing on a gourd slice, and fold it in a triangle. Seal it with a clove.

    Garnish with some fresh rose petals and edible silver leaf.
