INGREDIENTS

  • For Makai Khichiya

    • 1 tsp carom seeds

    • 1 tsp cumin seeds

    • 1 tsp red chilli powder

    • 1 tsp papad khar

    • 1 tsp asafoetida

    • 1 tsp chilli flakes

    • 2 cups corn flour

    • oil

  • For Khichiya Nachos

    • oil for frying

    • chopped tomatoes

    • 1 tbsp coriander leaves

    • chopped onion

    • salt

    • 1 tsp red chilli powder

    • 1 tsp black pepper powder

    • 1 tsp chopped green chillies

    • 1 tbsp lemon juice

    • 2-3 tbsp tomato juice

    • ½ cup cheese sauce

    • ½ cup jalapenos

    • 2-3 tbsp sour cream

    • coriander leaves

PREPARATION

    Heat oil in a pan and add salt, carom seeds, cumin seeds, red chilli powder, asafoetida, papad khar, and chilli flakes and give it a boil.

    Now add corn flour to it and cook for a few minutes till a dough is formed.

    Remove this dough on a muslin cloth, tie it. Steam this dough for 7-8 minutes in a steamer.

    Put this dough in a bowl, add some oil and knead a dough.

    Make small balls of the dough, place plastic sheets in the papad making machine and make papads.

    Let the papads dry in the sun for 2-3 days.

    For making Makai Khichiya Nachos, deep-fry the makai khichiya.

    In a bowl, mix together chopped tomatoes, coriander leaves, chopped onion, salt, cumin powder, red chilli powder, black pepper powder, chopped green chilli, lemon juice and tomato juice to make salsa.

    Cut the khichiya into small pieces. Pour cheese sauce on them, top them with salsa, jalapenos, chopped onions, and sour cream.
