INGREDIENTS

  • For Puris

    • 2 cups all-purpose flour

    • 1 cup semolina

    • 1 tsp carom seeds

    • salt to taste

    • 2 tbsp ghee

    • 1 cup lukewarm water

    • pinch of baking soda

    • oil for frying

  • For Halwa

    • 4 cups water

    • 2 cups sugar

    • 1 cup desi ghee

    • 2 cups semolina

    • 3 tbsp chopped cashew nuts

    • 3 tbsp chopped almonds

    • 1/2 tsp saffron

    • 1 tsp cardamom powder

    • 3 tbsp chopped pistachios

  • For Garnish

    • chopped pistachios

    • chopped almonds

PREPARATION

    In a parat, take all-purpose flour and add semolina, carom seeds, salt, ghee, baking soda and lukewarm water to it and knead a dough. Cover the dough with a wet muslin cloth for 30 min.

    For halwa, in a pan, mix together water and sugar and make a sugar syrup.

    In another pan, heat desi ghee, add semolina to it and roast till the semolina turns golden brown.

    Now, add chopped cashews and chopped almonds to it.

    Next, add saffron and cardamom powder to the sugar syrup and add this to the semolina mixture. Mix well and keep stirring till it thickens. As soon as the halwa thickens, switch off the flame and sprinkle with pistachios.

    Roll the dough and cut out small, round puris with the help of a cutter.

    Deep fry the puris.

    Add chopped almonds and pistachios to the halwa.

    Take a puri, make a hole in it and stuff it with halwa. Serve.
