INGREDIENTS

  • For Dahi Turai ki Sabzi

    • 1 cup curd

    • 1 tbsp gram flour

    • 1 tsp turmeric powder

    • rock salt to taste

    • 2 green chillies

    • 2 tbsp ghee

    • pinch of asafoetida

    • 1 bay leaf

    • 1 cinnamon stick

    • 2-3 dried red chillies

    • 1/2 tsp cumin seeds

    • 1/2 tsp nigella seeds

    • 2 cups ridge gourd

    • rock salt to taste

    • 1 cup grated tomato

    • a pinch of turmeric powder

    • water as required

    • 1 tsp jaggery powder

PREPARATION

    In a bowl, add 1 cup curd, 1 tbsp gram flour, 1 tsp turmeric powder, rock salt, 2 chopped green chillies and mix it well.

    In a pan, heat 2 tbsp ghee, add a pinch of asafoetida,1 bay leaf, 1 cinnamon stick, 2-3 dried red chillies, 1/2 tsp cumin seeds, 1/2 tsp nigella seeds, 2 cups of chopped ridge gourd, rock salt to taste, 1 cup grated tomatoes, a pinch of turmeric powder and let it cook.

    Add some water to the curd and then mix it with the vegetables.

    To pacify the sourness of ridge gourd, add 1 tsp grated jaggery and cook it on low flame for 2 minutes.

    Dahi turai ki sabzi is ready. Serve it with bajra roti.
