In a bowl, add 1 cup roasted semolina, 1 cup desiccated coconut, 1 tsp cardamom powder, 1/2 cup mixed dry fruits, 1/2 tsp cumin powder, 1 cup grated cucumber, rock salt to taste, 1/2 cup jaggery powder, cucumber juice and mix it well.

Transfer the prepared batter into a non-stick baking pan and put it into a steamer for 15-20 mins.

Once set, cut the cake into the desired shape.

Garnish it with mixed dry fruits and jaggery powder. Cucumber cake is now ready to serve.
