SPINACH CHEESE MUSHROOM QUICHE By Krish G

Rains and quiche go hand in hand. This quiche has all the goodness of palak and unmatched taste of the cheese. Can't stop with one bite.

INGREDIENTS

  • For the base :
  • 9 inch dish
  • 1 3/4 cups all purpose flour
  • 1/2 cup oil
  • 1 1/2 tsp salt
  • Chilled water
  • For filling:
  • 3 packed cups of blanched spinach
  • 150 to 200 gms of cottage cheese
  • 3 to 4 big size mushrooms
  • 1 big onion chopped fine
  • 4 to 5 cloves garlic
  • 1/2 cup cream
  • 1/2 cup shredded cheddar cheese
  • 2 eggs
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • pepper to taste

PREPARATION

    Knead all the ingredients for the base together, refrigerate the dough for atleast 30 mins.

    Take it out and roll it to dish size, line the dish and bake for 15 minutes at 180 .

    For filling:.

    Squeeze out all water from the spinach.
  5. 5

    In a pan heat 1 tbs olive oil, add chopped onion and garlic.
  6. 6

    Sautee the chopped mushroom until tender.
  7. 7

    Add spinach and sautee till all water leaves the spinach.
  8. 8

    Add crumbled cottage cheese to this, sautee for a bit. Keep aside.

    In a bowl mix well beaten eggs, cream, cheese, chilly pepper, salt and pepper.

    Add this to the spinach mix.

    Fill the half done mould with the above.

    Sprinkle some more cheese on top.

    Bake for 25 to 30 mins at 180 degrees till the edges are golden and the filling is spongy but not overbake.
