Spicy Chilli-Chocolate Orangy Zest Dry Fruit Cake By Ruma Sahu Bera

INGREDIENTS

  • Condenced milk ( 150 grams )
  • Flour (150 grams )
  • Baking Powder ( 1 tbsp )
  • Baking soda  ( 1/2 tsp )
  • Dark chocolate ( 60 grams )
  • Cashew flakes ( 1/4th cup )
  • Butter ( melted,100grams )
  • Cinnamon powder(1tbsp)
  • Cardamom powder  (1 tsp )
  • 1Honey ( 1/2 cup )
  • 11 ) Brown sugar ( 175 grams )
  • 1Chocolate essence ( 1tsp
  • 1Salt ( 2 pinch )
  • 1Orange juice ( 1/2 cup )
  • 1Orange zest (1 tbsp)
  • 1Lemon juice ( 1 tsp )
  • 1Lemon zest (1 tsp )
  • 1Dry Cranberries (1 tbsp )
  • 1Black raisins (1/4th cup)
  • 2Golden raisins (1/4th cup)
  • 2Orange essence ( 1tsp )
  • 2Dates (in pieces , 2 tbsp )
  • 2Tuttifrutti ( 1/4th cup)
  • 24 )   Red cherries (2 tbsp )
  • 25 ) Green cherries ( 2 tbsp )
  • 26 ) Almond flakes ( 1/4 cup )
  • 27 ) Walnut pieces ( 1/4 cup )
  • 28 ) Whole Cashew , Almond, Walnut and Cranberries ( for garnishing)
  • 29 )   Fresh red Chilli powder ( 1 tsp )
  • 3Ginger powder ( 1 tsp )

PREPARATION

  1. 1

    Mix orange juice, orange zest, lemon juice , lemon zest, dates,  raisins , dry cranberries, tutti frutti, red and green cherries, and soak it for 6 hours.

    Melt dark chocolate and condenced milk in double boiler method , mix red chili powder.
  3. 3

    In a big bowl, sieve and mix all the dry ingredients- flour , baking powder , baking soda, salt, ginger powder , Cinnamon powder, Cardamom powder.

    In another bowl, mix melted butter and brown sugar, and beat them with a hand beater. Add orange essence,chocolate essence, melted dark chili chocolate , honey,all the sieved dry ingredients ,all the soaked dry fruits, flour coated Walnut, Cashew, Almond flakes.

    Pour the cake batter in a 8 inch greased cake mould, and spread evenly.

    Decorate flour coated whole dry fruits over the cake batter.

    Pre-heat the microwave oven at 170 degree Centigrade for 15 minutes.

    Bake the cake batter for 60 minutes at 170 degree Centigrade.

    9 ) Cool it completely and serve it.
