Spice carrot cake with cream cheese frosting By Rahul taneja

Winters season is all about green vegetables and specially carrot which is so versatile that we can use it in many ways, so here i m sharing my favourite spice carrot cake served with cream cheese frosting a must try recipe .

INGREDIENTS

  • 60 gm all purpose flour
  • 50 gm vegetable oil
  • 2 gm baking soda
  • 80 gm brown sugar
  • 1 whole egg
  • 1 gm cinamon powder
  • 80 gm grated carrots
  • Pinch cardamom powder
  • 10 gm roasted pecan nuts/walnuts
  • For cream cheese frosting:
  • 50 gm Cream cheese
  • 10 gm icing sugar
  • 100 ml whipping cream

PREPARATION

    In a bowl add sugar ,eggs and oil ,whisk it for 30 sec till properly mix.

    Then add grated carrot and mix.
  3. 3

    Now add dry ingredients and mix using whisk for 1 min.

    Now add pecans and mix.
  5. 5

    Pour in mould and bake @160.c for 40min.

    Once baked cool down and cut in slices as per chioce.

    For cream cheese frosting:.

    Whip cream and icing sugar togethor then beat till medium peak.
  9. 9

    Whisk cream cheese and fold in cream mixture.

    You can add lemon zest too in cream cheess frosting.

    Serve carrot cake slice with cream cheese frosting along with carrot jelly garnish and carrot julliens.
