Ragda pattice By Zainab

It is a popular Mumbai street food snack that is loved by everyone. It consists of potato patties served with a peas curry and a variety of sweet, spicy and tangy chutneys ,creamy yogurt, ground spices, and sev.

INGREDIENTS

  • White peas / Ragda - 1.5 cup
  • Potatoes - boiled and mashed -8-10
  • Yoghurt / curd - for topping
  • Onions , tomatoes - finely chopped for topping
  • Pomegranate- for topping
  • Sev - for topping
  • Chaat masala to sprinkle as a topping on ragda and also for making ragda
  • Black / regular salt - for ragda
  • Bread crumbs for potato pattice
  • Roasted cumin powder - ragda

PREPARATION

    Prep of ragda / white peas gravy and potatoes : soak 1.5 cups of white peas in water overnight or for 8-9 hrs . Drain the water and put them into a pot . Now add 1/4 tsp turmeric powder , 1/2 tsp red chilli powder , oil 1 tsp and salt. Now add water and boiled , chopped potatoes in it . Cook on a medium flame until it’s consistency is slightly thick and flowing . Check if potaoes are properly cooked . Turn of the flame .

    Making of potato pattice : in a tray , put mashed boiled potatoes along with bread crumbs -1/4 cup , 1/2 tsp red chilli powder and salt . Mix them well and knead into a dough . Make flat round shaped pattice and fry in a pan until golden brown .

    Making of ragda : in another bowl take a portion of warm ragda and place 2-3 pattice in it . Put yoghurt , green chutney , dry red chilli chutney and tamarind chutney as per your taste . Now sprinkle a pinch of chaat masala , roasted cumin powder on top of it . Top it with pomegranate and finally with sev for crunchyness and you are good to go . Enjoy 😊.
