Pumpkin in Sweet Coconut Milk By Payal Varma

This is Thai dessert recipe that is simple yet comforting.

INGREDIENTS

  • 100 gm semi-ripe or unripe pumpkin, peel and washed
  • 100 ml coconut milk
  • 5 pandan leaves
  • 75 ml water
  • 20-25 gm palm sugar
  • A pinch of salt

PREPARATION

    Cut the pumpkin into medium-sized pieces and wash them again.

    Add coconut milk and pandan leaves to a pot.
  3. 3

    Add water and heat everything on medium flame.
  4. 4

    Add pumpkin and simmer until cooked.
  5. 5

    Add palm sugar and salt as per your preference.
  6. 6

    Turn off the heat. Serve warm or chill it in the fridge and enjoy later.
