INGREDIENTS

  • Flattened rice ( poha ) - 1 cup
  • Oil - 2 tbsp.
  • Onion - 1 peeled and finely chopped
  • Potato - 1 boiled and chopped
  • Green chilli - 1 tsp. Chopped
  • Mustard seeds - 1 tsp.
  • Curry leaves - 1 handful
  • Asafoetida - 1/2 tsp.
  • Fennel - 1/2 tsp.
  • Red chilli powder - 1/2 tsp.
  • Turmeric powder - 1/4 tsp.
  • Sugar - 1 tsp.
  • Salt - to taste
  • Lemon juice - 1/2 tsp.
  • Raw peanuts - 1 tsp.
  • Fresh coriander leaves - 2 tbsp. Chopped
  • Sev bhujia - for garnish
  • Pomegranate seeds - for garnish

PREPARATION

    Gently wash the poha in a strainer under runing water for about 2-3 times. Remove all water and keep the poha in strainer.

    Now, heat oil in a pan and add peanuts, stir it for few seconds on a low flame and then remove fried peanuts in a bowl. In the same pan, add asafoetida, mustard seeds, fennel and curry leaves. Let them splutter. Now add chopped onion green chilli and stir it untill onion becomes light pink in colour, add boiled and chopped potato and stir for one minute.

    Add poha, salt, turmeric powder, red chilli powder and sugar. Mix all the spices with poha properly. Now sprinkle little bit water on poha, mix and cover the lid on pan and leave it on a low flame for one to two mins. Turn off the flame after two minutes and add lemon juice and fresh coriander leaves on poha and mix it gently.

    Remove the pan from flame and transfer the poha on a plate.

    Garnish poha with fried peanuts, chopped onions, sev bhujia and pomegranate seeds.
