Mango Cookies By Deepa Gad

When mangoes are plentiful in the mango season, the mango pulp can be removed and stored in the freezer for years. Today I got to make mango cookies for that.

INGREDIENTS

  • 1 cup all purpose flour
  • 1 tbsp gram flour
  • 1 tbsp fine semolina
  • 1/2 cup ghee
  • 1/2 cup powdered sugar
  • A pinch of salt
  • 2 tbsp mango pulp
  • 1/4 tsp baking powder
  • 1/4 tsp cardamom powder

PREPARATION

    First add ghee and powdered sugar and whisk till creamy. Then add thick mango pulp and cardamom powder(optionaand beat well.

    In a sieve, add all purpose flour, baking powder, salt and sieve. Let the microwave preheat to 180 ℃ for 10 minutes.

    Roll the dough into small flat balls with your fingers. Spoon the mango pulp into it.

    Prepare and bake in preheated microwave for 18-20 minutes. When cool, serve Mango Cookies.
