Malwa Ki Khushboo By Urvashi Belani

In this recipe, I have made malwa (m.p) special dal bafla in morden way. I have made bafla roll with paneer and dal stuffing. I have made three different types of chutney. I have made jowar savory crumble also. All the ingredients that I have used in this recipe are produced in Malwa. For example, poppy seeds, sorghum, wheat, Flaxseeds, garlic, chana etc. That's why I have named this dish as "Malwa Ki Khushboo"....

INGREDIENTS

  • For Bafla roll: 1 cup wheat flour, 2 tbsp curd, 1/2 tsp fennel seeds, 1/2 tsp carom seeds ,1/4 cup ghee, Pinch of baking soda, Salt to taste Ghee for dipping
  • Chana dal Stuffing: 1/2 cup chana dal (soaked), 5 to 6 roasted cashews, 2 tbsp oil, 1/2 tsp cumin seeds, 1/2 tsp mustard seeds, 1/2 tsp fennel seeds, 1/2 tsp coriander seeds, 1/4 tsp asafoetida, 2 chopped green chillies, 1/2 tsp red chilli powder, 1/2 tsp chaat masala ,1/2 tsp garam masala ,Salt to taste ,Coriander leaves 1 tsp lemon juice
  • For paneer stick 3 to 4 paneer sticks ,Salt to taste ,1/2 tsp red chilli powder ,1/2 tsp chaat masala ,1/4 tsp garam masala ,1/2 tsp lemon juice ,Oil for shallow fry
  • For jowar churma: 1/2 cup sorghum flour ,Salt to taste ,3 to 4 tbsp ghee ,1/2 tsp mustard seeds ,1/2 tsp cumin seeds ,1/4 tsp asafoetida ,Some curry leaves.,1 tsp chopped garlic ,1 chopped green chilli ,1/2 tsp red chilli powder ,1/2 tsp ,turmeric powder ,1 tbsp sugar ,1 tsp lemon juice ,Coriander leaves
  • For poppy seeds chutney: 1/2 cup roasted and soaked poppy seeds ,3 Garlic cloves, 3 to 4 green chillies, 1 small piece of ginger, 1/2 cup coriander leaves, salt to taste, 1 tbsb sugar, 1 lemon juice
  • For flaxseeds chutney: 1/2 cup roasted Flaxseeds, 2 garlic cloves, 6 to 8 soaked whole red chillies, 1/2 cup tamarind water, 1/2 tsp black salt, Salt to taste, 1 tbsb sugar, Pinch of asafoetida, 2 tbsp mustard oil, 1/2 tsp cumin seeds
  • For lahsuni chutney: 1/2 tsp Garlic, 10 to 15 soaked red whole chilli, 1/2 lemon juice, salt to taste, 1 tbsb oil, 1/2 tsp cumin seeds
  • For lahsuni ring: 1 /2 cup all purpose flour,1 tbsp lahsuni chutney, salt to taste, 11/2 tbsp oil, 1/4 cup water

PREPARATION

    Chana dal Stuffing: Pressure cook the chana dal with salt. Now in a pan heat oil add mustard seeds, cumin seeds, fennel seeds, coriander seeds, asafoetida and green chilli, then add boiled dal. Add all spices mix it well. Add cashews, coriander leaves and lemon juice.

    Paneer stick: In a bowl , add paneer and all spices and mix it well. In a nonstick pan, shallow fry the paneer properly.

    Bafla roll: In a bowl, add all ingredients and mix it. Now add water and knead the dough, rest it for 10 to 15 minutes.

    Take paneer stick and cover it with chana dal Stuffing. Then take some portion of the dough and stuff chana dal roll in it and make cylinder roll. Then steam the rolls for 10 to 15 minutes. Now bake the rolls in preheated oven for 20 to 25 minutes on 200d. Or you can bake it in bati oven. Now heat the ghee and dip the rolls properly.

    Jowar churma: In a bowl add flour, salt and 1 tbsp ghee, add water and knead the dough. Now make roti and cook it on tawa on law flame. Then crush it properly. Now heat ghee, add mustard seeds , cumin seeds, asafoetida, curry leaves, garlic and green chillies, then add crushed jowar roti. Add all spices and mix it well. Add lemon juice and coriander leaves.

    Poppy seeds chutney: In a grinder mix all ingredients and grind it well.

    Flaxseeds chutney: In a grinder mix all ingredients (exept mustard oil and cumin seedand grind it well. Now tempering it with mustard oil and cumin seeds.

    Lahsuni chutney: In a grinder mix all ingredients (exept oil and cumin seedand grind it well. Now tempering it with oil and cumin seeds.

    For lahsuni ring: In a bowl add all ingredients and mix it well. Spread this mixture on parchment paper, put small and big ring mould on it. Bake it in preheated oven on 180d. for 10 to 12 minutes.
