Kashmiri Aab Gosht (Doodh Maaz) By Uzma Khan

Aab Gosht is one of the most popular dishes in Kashmir food and culture. In this flavoursome dish, the mutton is cooked in milk and spices and when it is cooked right the succulent meat tears right from the bone. It is best relished with well-cooked saffron rice.

Cooking Time15 mins, cook time : 30 to 40 mins

INGREDIENTS

  • 1 kg mutton
  • 1 litre milk
  • 1 tbsp +1 tsp fennel powder
  • 1 cinnamon stick
  • 2 black cardamom
  • 4 to 6 black pepper corn
  • 4 green cardamom
  • 6 to 8 garlic cloves
  • 31/2 tbsp milk powder
  • 1 tsp cumin powder
  • 1/2 tsp grind green cardamom powder
  • 1 tbsp deep fried onion paste
  • 1 tbsp vegetable oil or preheated mustard oil
  • 11/2 tbsp ghee
  • 1 tbsp sugar

PREPARATION

    In pressure cooker add milk in mutton and keep in gas to bring boil, when done discard all impurities over the top of mutton.

    Now add salt as per taste, Fennel powder, cinnamon stick, black cardamom, black pepper corn, green cardamom, garlic cloves, now close the lid and take 4 to 5 whistle or till mutton soft.

    Open the lid and again cook the mutton till mutton stock thick and infused the smell and flavour in stock.

    Take 11/2 glass water in a bowl, add milk powder whisk and mix well, no lumps remaning, Boil the milk continuously stir, to avoid curdle.

    Now add fennel and cumin powder and cook on low flame for 5 to 7 minutes .

    Add cooked mutton pieces and strain the mutton stock and add this in mixture, now add grind green cardamom powder and mix.

    Add deep fried onion paste, vegetable oil and ghee and cook.

    When done finally add sugar at time to serve.

    Now "Aab Gosht" is ready, serve the Kashmiri Wazwan and enjoy .
