Christmas special Plum cake By PRATIK PANDHARPATTE

A fruity and nutty cake recipe with the goodness of cherries, almonds, raisins,etc. This cake is great as a dessert with a dollop of ice cream or works prefect with your evening tea . It is served widely across the globe around the holiday season and festival of Christmas.

INGREDIENTS

  • 1 cup butter
  • 1 1/2 cup sugar
  • 6 Eggs
  • 125 gms chopped almonds
  • 2 tsp vanilla essence
  • 2 1/2 cups chopped mixed fruits
  • 2 cups refined flour
  • 8 inch cake tin

PREPARATION

    Mix the chopped fruit and almonds with 2 Tbsp of the maida and keep aside.

    Cream butter, sugar, eggs and vanilla together.
  3. 3

    Fold in the flour and then the fruit mixture.
  4. 4

    Transfer mixture into the prepared tin and bake in a pre-heated oven for 30-40 minutes.
