Caramelised Almond Vanilla cake with Whipped Cream By Hardik

This recipe is very close to my heart because i made it on my parent's anniversary and ever since it has been a tradition to make this cake every year. It is a gooey and relishing mix of caramelised almonds with the slightest hint of vanilla glazed over a soft bread into a delectable cake.

INGREDIENTS

  • -Refined flour
  • -Cinnamon powder
  • -Baking powder
  • -Flaked almonds
  • -Sugar
  • -Vegetable oil
  • -Butter
  • -Curd
  • -Fresh Cream
  • -Whipped Cream

PREPARATION

    Dry ingredients: 1+ 1/2 cup Flour 1+1/2 tbsp Baking powder 1+1/4 tsp cinnamon powder. Seive it well and mix them.

    Wet ingredients: 1/2 cup vegetable oil 3/4 cup sugar Mix them well, until the sugar starts to dissolve in the oil, then add , 1 tsp vanilla extract 3/4 cup curd.

    Now add the dry ingredients into the wet ones and mix them well, pour it into a baking tin and put it inside a pre-heated (@160°-180°) oven for 30-35 mins.

    Caramel: In a pan add , 1/2 cup granulated sugar, 3 tbsp water, Now let it cook well until the sugar turns into an amber colour, and then turn the heat off and add , 6 tbsp fresh warm cream And mix it well, then add 1 tbsp butter , And the delicious caramel is ready. Add 6 tbsp flaked Almonds to it and give it a good mix (not too much).

    Take the cake out of the oven and pour this beautiful caramel over it and then bake the cake (for 10 minutes).And now the cake is ready , it's time for some whipped cream.

    Whipped cream: 1/2 cup whipped cream Beat it well using an electric mixer or balloon whisk, Then add the sugar in batches (according to your tast,The whipped cream is ready , put it in your piping bags and start decorating your cake.
