Authentic karnataka style methi veg pulaw By Lakshmi Ranji

This is an authentic recipe of Karnataka. The taste is really amazing as Homemade masala is used while preparing. Lots of vegetables are assembled with basmati rice and cooked together in a pressure cooker with some spices, which makes it a mouth watering dish. This is my favourite rice dish. Here in Karnataka,such a type of pulao is made in all functions nd marriages.

INGREDIENTS

  • 1 cup rice
  • 1 cup fresh Fenugreek leaves
  • 11/2tbsp oil or mustard oil
  • 1onion
  • 1potato
  • 1tsp red chilli powder
  • 2whole red chilli
  • 1/2 tsp turmeric powder
  • 1lemon or 2tsp tamarind pulp

PREPARATION

    Wash nd soak rice for 30 minutes .Clean Fenugreek leaves nd chopped all vegetables..

    Heat oil in a wok. Add chopped garlic and chillies. Saute until garlic is light brown. Add washed fenugreek leaves, chopped veggies,turmeric powder and salt. Cook for 3-4 mins on high flame until moisture evaporates. Add ¼ cup of water and cover the wok. Cook for 3-5 mins till Methi is cooked. Add 2 cups of water, Roll boil, add rice to boiling water and cook till half done. Add tomatoes and cook the rice until water evaporates. Cover the wok and cook on low flame for 2-3 mins.
