INGREDIENTS

  • For classic vanilla cupcake
  • Maida - 1 cup
  • Baking powder - 1 tsp Baking soda - 1 tsp
  • Country sugar - 1 cup
  • Thick curd - 1/4 cup
  • Oil - 3 tbsp Melted butter - 1/4 cup
  • Melted butter - 1/4 cup Bourbon vanilla essence - 2 tbsp
  • For Choco-elachi frosting
  • Elachi powder - 1 tsp Room temperature butter - 1 cup
  • Country sugar - 1.5 to 2 cup Organic green liquid food colour - few drops Chocolate essence - 1 tsp

PREPARATION

    In a mixing bowl, whisk curd, oil and melted butter, whisk thoroughly until the mixture tuens soft and smooth.

    To this sieve maida, country sugar, baking powder and baking soda. Mix using cut and fold method.

    Do not over mix. Now transfer the mixture into small/normal greased cupcake moulds.

    Preheat the kadai with sand or salt for about 10 mins on high to medium flame. Now place the cupcake moulda into the kadai and close the lid.

    Now keep the flame in medium to low flame and cook for about 10-15 mins or until its completely cooked. Check if it's done by inserting a toothpick. Allow them to cool. Completely.

    To a bowl add room temperature butter beat it for about 5 minutes, then add country sugar, elachi powder and beat for about 5 minutes on high speed with a electric beater.

    Now add chocolate essence and organic liquid food and beat well Now add into a piping bag and design on the cupcakes with desired shape.

    Sprinkle colour sprinkles to add on to the colour. (optionaClassic vanilla cupcakes with Choco-elachi frosting ready to be served.
