Cooked in coconut milk without using oil

INGREDIENTS

  • 500 g potato
  • 1 big coconut
  • Green chillies 4/5
  • Pandon leaf 1
  • Medium size onion ( cut into small pieces)
  • Curry leaves 1 string
  • Fenugreek seeds 1/2 tsp
  • Cinnamon stick 1
  • Turmeric powder 1/2 tsp
  • Mustard 1/2 tsp

PREPARATION

    Boil potatoes and cut into thick slices .

    Take coconut grind it in mixer with very less amount of water so that you extract thick milk from it. Coconut milk should be approximately 1 1/2 cup .

    Then add some more water in the coconut leafover to make a thin coconut milk approximately 2cups.

    Boil curry leaves, pandan leaf green chillies, onion, cinnamon, Fenugreek seeds, turmeric powder and salt in thin coconut milk till it becomes half .

    Add thick coconut milk and keep stirring so that it will not curdle.

    Now add sliced potatoes and cook for 4-5 min and switch off the gas.

    Now roast mustard and make a powder. Lastly sprinkle it in the curry .
