Dal Moth Ke Samose

In a parat, mix together all-purpose flour, carom seeds, salt, ghee and water and knead a dough. Cover the dough with a wet muslin cloth.

For the stuffing, heat ghee in a pan and add chopped ginger, chopped green chillies, soaked moth beans, salt and water and cook till the dal softens.

Next, add dry mango powder, coriander powder, garam masala and chaat masala to the dal moth, mix well and cook it till the mixture dries. Remove the mixture in a bowl.

Divide the dough into equal portions and make round balls.

Roll the balls into oval shape and cut into half.

Take on part, make a cone, apply water on the edges, add stuffing and fold like a samosa.

Make all samosas in the same way and fry them till crisp.

Serve Dal Moth Samosas with tamarind chutney.

Sattu Ka Sharbat

Grind the roasted chana to make sattu powder from it.

Take the sattu powder in a bowl, add roasted cumin powder, black salt, lemon juice, and water to it and mix well. 

Add chopped coriander leaves, mint leaves and ice cubes to it, mix and stir well.

For chocolate sattu shake, grind peanuts, sugar and sattu together in a mixer jar. 

Pour chocolate sauce in a bowl and add the ground mixture to it. Now add milk to and mix well so that no lumps remain.

Next, blend this mixture in a mixer with ice cubes.

Pour it in a glass, garnish it with chocolate sauce and serve.

They can be deep-fried or roasted in the microwave.The crunchy, crispy Fryums can be had with rice & curry, or khichadi. They add more texture and flavour to the meal.

Fryums

Heat 2 cups of water in a pan, add salt and all-purpose flour to it and cook till a thick mixture is obtained.

Divide the mixture in three different bowls. Add yellow food grade colour in one bowl and pink food grade colour in another bowl and mix well.

Take a piping bag, fill the mixtures in it and make fryums on a plastic sheet.

Allow the fryums to dry in the sun for 3-4 days.

Deep-fry the fryums in hot oil.

In a pan, boil milk until it thickens.

In a mixer, add 5-6 betel leaves, 1 tbsp gulkand, milk and blend it.
