INGREDIENTS

  • For Ajwaini Chicken Pakora

    • 400 gm boneless chicken

    • 1 tsp red chilli powder

    • 1 tbsp Kashmiri red chilli powder

    • 2 tsp ginger garlic paste

    • 1 tsp turmeric powder

    • 1/2 to 1 tsp carom seeds

    • 1 tbsp garam masala

    • 2 tsp coriander powder

    • black pepper powder as per taste

    • salt to taste

    • oil for frying

  • For the batter

    • 1 cup besan (gram flour)

    • 1 tbsp rice flour

    • garam masala

PREPARATION

    In a mixer jar, take coriander seeds, black peppercorns, amchur powder, citric acid, dry red chilli, cumin seeds, and grind to a coarse powder.

    Add black salt and more of amchur to this mixture.

    Marinate the chicken with lemon juice, ginger garlic paste, Kashmiri red chilli powder, black salt, carom seeds and mix well. Rest the chicken for 4-5 hours.

    In a bowl take besan, rice flour and garam masala. Coat the marinated chicken in this mixture. Sprinkle some water from the top and coat the chicken well.

    Heat oil in a pan and deep fry the coated chicken.

    Remove the chicken pieces from the oil. Cut them into half and re fry them for better flavour and texture.

    Once cooked, sprinkle the earlier prepared masala on top and serve.

Ajwaini Chicken Pakora is a crispy and crunchy deep-fried popular monsoon dish in India. Pakoras are much-loved snacks in India that can be made with different ingredients like onions, potatoes, lentils etc. Here the chef makes pakoras with chicken and adds carom seeds (ajwain) to it along with other spices and herbs to give it an authentic taste. These pakoras are dipped in a batter made from besan (chickpea flour) which gives them their unique taste and crunch.

The super crispy, crunchy Ajwaini Chicken Pakoras are amazingly delicious.
